Monday menu suggestions — we have a surplus of aubergine

The rescue team brought in 15kg of aubergine on Friday. It needs to be used by Monday. Menu ideas welcome — we need something that scales well and works for dietary restrictions (we have several regular vegan and gluten-free guests).

Curry is probably safest for a big batch with dietary variety. I can come in Sunday to help prep if useful.
